Has been a vegetarian for 30 years and the only time they eat, roasted nuts at Christmas is a cliché because it is different!
I am one, which is a mixture of chopped cashew nuts, bread crumbs, cooked parsnip puree, seasoned with thyme and rosemary and a beaten egg to bind. You can layer in a saucepan with mushrooms cooked in sherry vinegar.
It has a festive taste and goes well with the usual fare of English Christmas, and it is good cold the next day. Freezes well before the final baking.
I tend to forget things, but I would like to know if you need the exact recipe, and I can dig.

For my Christmas dinner, I only have two fillets Quorn Quorn Roast with all the usual accessories. Simply replace the meat and of course the vegetable sauce. You can even fill it .... mmmmm

225 g bulgur
330 ml boiling water
3 x 15ml tbsp soy sauce
175g pistachios
175 g pine nuts
225 g blanched almonds
175g cashew nuts
110g hazelnuts
110 g sunflower seeds
110 g poppy seeds
250 g onion, finely chopped
4 x 15ml spoons fresh parsley, finely chopped
2 x 15ml tablespoons dried thyme
4 large free range eggs, lightly beaten
4 x 15ml spoons olive oil
A little oil for pouring on roast
1. Place corn in a bowl and pour boiling water and soy sauce.
Cover and let swell 25 minutes.
